The Goat's Violin
On the mountains of Val Veddasca, the "Violino di capra" is still made. This special ham, which is in the shape of a violin, is obtained from the leg of a semi-wild goat or sheep. It has an intense, delicately spicy fragrance and flavour. This ham is so exceptional and so highly appreciated, that it has obtained the "Protection" of the Slow Food Movement.
Fragrant traditional recipes handed down
Of the sausages, we should mention the Salame Prealpino Varesino, a particular type of salami that comes from the master craftsmen of the Longobards, who handed the recipes down from father to son. Another, extremely fragrant product, with its distinctive, spicy aroma, is Lardo Lonzato Monterosa, a cured bacon fat.
